19 Oct Tofu Scramble and Spinach Stuffed Portobello Mushrooms

Ingredients:
(preferably organic)
~ 2 portobello mushroom
~ 2 slices of tofu
~ Primal Kitchen rosemary and garlic mayo
~ 3 handfuls of spinach
~ 1 tbsp of minced garlic
~ Dash of Himalayan salt
~ Dash of garlic salt
~ Olive oil
Directions:
~ Remove inside of mushroom
~ Spread a light layer of mayo on the inside of the mushroom and season with garlic salt
~ Coat the air fryer with oil
~ Place mushrooms in air fryer
~ Place a tbsp of oil and garlic in a pan
~ Place tofu in pan and start to scramble, by splitting it up into small pieces
~ Season tofu
~ Add in spinach to tofu and mix around until the spinach has shrunken down
~ Take out mushrooms and stuff them with tofu spinach mix
~ Enjoy!
